3 kananmunaa
2 dl fariinisokeria
2 dl vehnäjauhoja
2 tl leivinjauhetta
1/2 dl mantelijauhetta
1/2 dl murskattuja piparkakkuja
100g voita sulatettuna
Kuorrute:
2 dl tomusokeria
2 rkl maustamatonta tuorejuustoa
2 rkl vadelmahilloa
2 rkl voita sulatettuna

1. Vaahdota kananmunat ja fariinisokeri. Yhdistä kuivat aineeet keskenään ja lisää kananmuna-sokerivaahtoon vuorotellen sulatetun voin kanssa
2. Täytä muffinivuuat 2/3 täyteen parin pikkulusikan avulla. Paista 175-asteessa 15 minuuttia
3. Jäähdytä muffinit
4. Sekoita kuorrutteen aineet ja levitä muffinien päälle. Viimeistele tuoreella vadelmalla

Johan L. Runeberg is a national poet of Finland. He has written lyrics to Our land / Maammelaulu, that is national anthem in Finland. Runeberg torte is traditional Finnish pastry that is served February 5th, that is birthday of J.L. Runeberg. Story tells that Runeberg´s wife Fredrika created Runeberg torte by using ingredients that were available, as Johan desired for sweet cakes and not much was available for baking at that time. Our version is modern and far from authentic. Original version of mini-muffins was published at Pirkka-magazine, our version is twisted from that.
MINI-MUFFINS BY RUNEBERG
(30 mini-muffins)
3 eggs
2 dl brown sugar (Finnish "fariinisokeri")
2 dl all-purpose-flour ("vehnäjauho")
2 tsp baking powder
1/2 dl ground almond
1/2 dl crushed ginger bread ("piparkakku")
100 g melted butter
topping:
2 dl icing sugar
2 tbs cream cheese (Finnish "tuorejuusto")
2 tbs raspberry jam
2 tbs melted butter

Fresh/ dried raspberries
1. Whisk eggs and brown sugar. Mix dry ingredients and add to egg-sugar mousse by turns with melted butter.
2. Fill in muffin molds 2/3 by using 2 small spoons. Bake 15 minutes in 175-degree
3. Let muffins cool
4. Mix topping ingredients and and spread muffins with topping. Finalize muffins with fresh raspberries
