Recipe in English below the Finnish one. When you google Finnish "piparkakku or pipari" English translation is gingerbread. Gingerbread can be a cookie with ginger as an only spice or combination of different spices. Gingerbread is also a spicy bread/cake. These cookies belong to Finnish Christmas time, so I name them "Finnish Christmas cookies". Traditionally every family made their one dough, nowadays most families buy frozen dough from supermarket. So do I also. This is first time in years when I made a dough by myself. This recipe is like my mom made a dough when I was a kid. Every family had their own recipe, so you can twist this if you dare to, as my mom´s cookies are the best!
JOULUPIPARIT

2 dl tummaa siirappia
2 dl hienoa sokeria
2 tl inkivääriä
3 tl kanelia
2tl kardemummaa
2 tl neilikkaa
2 tl pomeranssinkuorta
ripaus suolaa
250 g voita
2 kananmunaa
9 dl vehnäjauhoja
2 tl ruokasoodaa
1. Mittaa siirappi, sokeri ja mausteet kattilaan ja kiehauta
2. Ota kattila liedeltä. Paloittele voi ja lisää seokseen. Sekoita kunnes voi sulaa. Anna jäähtyä 30 minuuttia
3. Vatkaa kananmunat yksi kerrallaan seokseen
4. Sekoita sooda ja vehnäjauhot ja vatkaa puulastalla pienissä erissä taikinaan
5. Tee taikinasta litteä levy ja kääri hyvin muoviin ja nosta yön yli jääkaappiin
6. Jaa taikina kahtia ja jätä toinen puolisko jääkaappiin. Kauli toinen puoli jauhotetulla pöydällä ohueksi levyksi ja ota piparkakkumuotilla pipareita. Nosta piparit leivinpaperoidulle uunipellille ja paista piparin paksuudesta riippuen 5-7 min 175 asteessa. Leivo myös toinen pala taikinasta pipareiksi (tai pakasta se tulevaa käyttöä varten) Piparit palavat helposti, eli ole valppaana

Pikeeri ääriviivoihin:
1 kananmunan valkuainen
3 1/2 dl tomusokeria
pari tippaa sitruunamehua
(karamelliväriä)

2 dl dark sugar syrup
2 dl granulated sugar
2 tsp ground ginger
3 tsp ground cinnamon
2 tsp ground cardamon
2 tsp ground clove
2 tsp ground bitter orange peel
pinch of salt
Buy grounded spices, or use whole spices and grind them by your self, bitter orange can be substituted by (fresh) orange peel. Not all the spices are mandatory, so you may leave one out if that is not available.
250 g butter
2 eggs
9 dl all-purpose flour
2 tsp baking soda
1. Add syrup, sugar and spices to a pan and bring to the boil
2. Take a pan from stove and cut butter to pieces and add to mixture. Mix well until butter has dissolved. Leave to cool for 30 minutes
3. Mix eggs to the mixture one by one and stir until combined
4. Mix baking soda and flour and add to the dough little by little while stirring all the time
5. Shape the dough into a flat plate and cover well with plastic. Place to the fridge over night
6. Split the dough in half and leave one half to fridge. Use rolling pin and roll out the dough until it is appr.3 mm thick. Use flour to prevent the dough to stick to the table or the rolling pin. Place cookies to the baking tray that has been covered with a baking paper. Cook in the oven in 175 celcius 5-7 minutes. Bake also another half, or put it to the freezer to be used later. Cookies burn easily, so be alert

Traditionally cookies are served plain, but they can also be served with a blue cheese and pears.You may also decorate cookies with a sugar icing.
